Apple Flax Muffins
Phase 3 stabilized (after 21 days) and Phase 4
3/4 C. Flax Seed Meal
1/2 C. Oat Bran
2 tsp. baking powder
1 Tbsp. Cinnamon
1 tsp nutmeg
1/2 tsp salt
3/4 C. Rapadura Sugar
4 Large eggs, eggs
1/4 C. extra virgin olive oil
1/2 C. water
1 Tbsp. pure Vanilla extract
1 medium apple, cored and cubed
1/2 C. walnuts or pecans, chopped
1/2 C. raisins (optional)
Mix dry ingredients and add the rest of the ingredients. Let stand for 5-10 minutes. Pour batter in muffin pan and bake for 15-18 minutes until done.
I thought sugar was sugar even if it is organic; can you make this with stevia and maybe apple sauce?
You have to be very careful of sugar choice. You can make with Stevia, but you may need to adjust the amount according to taste. If you do make it with Stevia and Applesauce, let me know how it turns out 🙂
Could I use coconut oil in place of the extra virgin olive oil?
coconut oil will become liquid at certain temp so it isn’t a trustworthy substitute.
how many muffins does this make and do you have the calorie stats?
Sorry, I didn’t figure the calories on this since it’s best to do this after you stabilize because it has a natural sugar which should only be added after stabilization. Once I stabilized, I didn’t count calories. I believe life long health is based on the foods we eat more than counting calories so I don’t count calories, I count what I eat. For instance, I daily eat 3 servings of lean protein, 4 cups of veggies, 1 grain, etc. So for this recipe I would eat one per day and count it as my grain.
