Coconut flour is very low in carbohydrates, contains no gluten, as has a high fiber content and is a good source of protein. It is made from finely ground coconut meat with most of the moisture and fat removed. It can be used for cooking and baking much like bleached, enriched flour which is flour stripped of all nutritional parts and then the manufacturer adds back in a few vitamins required by law and then they call it ‘Enriched Flour’!!

    I just started P4 and wanted to share a recipe that I found online for coconut macaroons. They are incredible. Not sure if this would be alright for P3 or not, but I am thinking they would be since they use agave nectar and no sugar.
    6 egg whites
    generous pinch sea salt
    1/2 cup agave nectar
    2 teaspoons vanilla
    3 cups unsweetened shredded coconut
    Using an electric mixer, beat egg whites and salt until stiff
    In a separate small bowl combine the agave and vanilla
    Fold the agave mixture and the coconut into the beaten egg whites
    Drop batter, in heaping teaspoon portions, onto a parchment lined baking sheet
    Gently mold any cookie that needs a little shaping
    Bake at 350F for 10-15 minutes, until lightly browned
    Remove from oven, slide the cookies (on the parchment) off the baking sheet onto the counter to cool for a few minutes and enjoy.

    Can you use Coconut flour in P2. I do not use Melba toast or Bread sticks, (living in France) but would like to use CF to ‘bread’ meatballs, chicken, etc, to cook in Coconut oil, on P2. I read on your tips you can use Coconut oil everyday, including P2. Hope I got this right. I will be starting R2P2 in about a week.

      Thanks for finding us – better late than never, right?

      I personally wouldn’t use the coconut flour, but if you are willing to experiment and give it a try and let us know how you do. I am not sure the reaction as I don’t know anyone who did it. I do believe that Dr. Simeons has the Melba / Grissini in the protocol for a reason and many who omit it, struggle in P3 and don’t maintain as well. So, if this is your only choice, it may be worth entertaining 🙂

    Is coconut flour only acceptable AFTER you stabilize in P3? Or can you use it during the first 2 weeks?

      You can use after the first week.. 🙂 introduce slowly..
