Cucumber & Tomato Salad (P2)

2 medium tomatoes, sliced and quartered
1 large cucumber, peeled and sliced
4 green onions, chopped
1 pkg. stevia
1 tsp. sea salt
1/4 tsp. pepper
1/3 cup apple cider vinegar
1 cup water

In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the stevia, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight.

    If we are not allowed to mix vegetables is this still okay?

    so it is ok to mix veggies? I thought only a protein and a veggie, no mixing?

      only when tomato is used as a fruit.

      right at 80 calories given normal portion sizes of the tomato and cucumber
