In today’s contest, we are going to share about charities, giving, and “Making Spirits Bright”. Giving is part of this season and we should all be looking for ways to help others. We can do this by buying a coffee for the person behind us or giving it to a charity organization.
As some of you know, my grandson Lucas was born in March 2018 and medically diagnosed with an extremely rare genetic condition called NKH (Non-ketotic hyperglycinemia). Meet my sweet baby boy.
While in the NICU I decided to start the nonprofit Lucas John Foundation. I can remember being in the hospital and seeing so many areas that could be better for families and was determined to help. Lucas’s journey in the first few years has been rough. Many hospitalization and issues with seizures. I have spent the last two years studying everything about gene expression and I am happy to report that he is so much better. Following my belief that “let thy food be thy medicine”, I applied many of the tools and nutrition tips I have learned on my own journey the past 10 years and have implemented them for Lucas. He still has developmental delays. He has a head lag and not sitting up yet at 21 months old. But he is 99% seizure-free now and slowly improves each day. And for that, we are extremely Grateful.
If you would like to help my sweet boy, we are doing a fundraiser Candy Cane Christmas for Lucas and having donors give $5.00 to have their name placed on a candy cane for his personal Christmas tree.

Baking Spirits Bright
Healthy Cookies for Your Family: (p4 Recipe, you could swap the coconut sugar for p3)
4 cups almond flour
1/4 cup coconut flour
1 tsp baking powder
1/2 tsp sea salt
1 cup butter softened
1 1/4 cup whole cane or coconut sugar
2 large eggs
2 tsp pure vanilla extract
In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt. In a large bowl, beat butter with sweetener until light and fluffy, about 2 minutes. Beat in eggs and vanilla. Beat in almond flour mixture until dough comes together.
Drop cookies out onto parchment-lined cookie sheets. Bake at 325 for 12 to 14 minutes, or until set but not browning much around the edges.
