Mini Frittatas Phase 3

1/4 C. ricotta cheese
1/4 C. Parmesan cheese, grated
1/4 C. mozzarella cheese, shredded
1/2 C. cooked and chopped spinach
1/4 C. onion, chopped
1/4 C. mushrooms
1 egg
6 turkey pepperoni or 2 slices no sugar added bacon, chopped
Sprinkle of oregano, sea salt and pepper

Mix the egg and Ricotta cheese until well blended. Add rest of ingredients and fill muffin cups. Bake at 375 for 20 – 25 minutes or until done. Makes 3 muffins.
