<p>Tonight was a big step for my p4 journey Olive Garden.  My husband who has been held ransom for months on where we eat said how about Olive Garden?&#8230; I prayed on the way they had something on the menu I would feel comfortable eating.   I will have to admit its tempting but I looked for their olive leaf light menu and I was very happy with my choice.  The best part was when I got home and looked up the calories it was only 380.  I skipped the veggies pretty much since I had salad which was 120 calories according to their<a href="http://www.olivegarden.com/menus/garden_fare/nutrition_information.asp" target="_blank" rel="noopener"> website</a>.</p>
<p>I was happy that there are healthy options out there we just have to chose them.  They are nice enough to share their recipes so you can cook them at home.  This would be great for P3 and P4.</p>

<div><strong>Ingredients</strong><br />
<span style="text-decoration: underline;">Apricot Sauce:</span><br />
1/2 cup chicken stock (broth)<br />
1/2 cup apricot preserves (try sugar free)<br />
Salt and pepper to taste<span style="text-decoration: underline;">Tomato Mixture:</span><br />
1/2 lb roma tomatoes, cut into 1” pieces<br />
6 basil leaves, cut into 1/2” pieces<br />
1 tsp garlic pepper<br />
Salt to taste</p>
<p><span style="text-decoration: underline;">Garlic Herb Seasoning:</span><br />
3 tsp garlic pepper<br />
1 tsp Italian seasoning</p>
<p>1 bunch asparagus (remove bottom inch of stems)<br />
1/2 lb broccoli florets<br />
1Tbsp extra-virgin olive oil<br />
4 boneless, skinless chicken breasts<br />
Chopped parsley to garnish</p>

<p>&nbsp;</p>
<div><strong>Procedures</strong></p>
<ol>
<li><strong>COMBINE</strong> Garlic Herb Seasoning ingredients in a small mixing bowl and set aside.</li>
<li><strong>BLEND</strong> chicken stock and apricot preserves in a sauce pan. Add salt &amp; pepper to taste. Bring to a boil and remove from heat.</li>
<li><strong>COMBINE</strong> tomatoes, basil, garlic pepper and salt in a separate mixing bowl and set aside.</li>
<li><strong>BLANCH</strong> asparagus and broccoli for 1 minute in a pot of salted boiling water. Transfer immediately to ice bath to stop cooking.</li>
<li><strong>COAT</strong> sauté pan with 1Tbsp olive oil. While keeping ingredients separated in pan, heat cooled asparagus, broccoli and tomato mixture and until hot. Do not overcook.</li>
<li><strong>GRILL</strong> chicken until internal temperature reaches 165°F.</li>
<li><strong>PLACE</strong> grilled chicken on a platter next to hot broccoli and asparagus. Sprinkle Garlic Herb Seasoning on broccoli. Pour tomato mixture on top of vegetables.</li>
<li><strong>TOP</strong> chicken breasts with apricot sauce and garnish with chopped parsley.</li>

<p>1/2 medium zucchini, cut a bit thicker, they tend to get mushy otherwise<br />
1/2 medium summer squash, cut a bit thicker<br />
1/2 medium red bell pepper,<br />
1/2 medium yellow bell pepper,<br />
1/2 pound fresh asparagus,<br />
1/2 red onion<br />
1 1/2 tablespoons MCT oil<br />
1/2 teaspoon salt<br />
1/4 teaspoon freshly ground black pepper<br />
Fresh garlic<br />
Onion powder<br />
Garlic powder<br />
Heat the oven to 450 degrees Place the zucchini, squash, peppers, asparagus, and onion in a large roasting pan. Toss with the oil, salt, spices and pepper to mix and coat. Spread in a single layer in the pan. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender. If desired, sprinkle 1/2 cup shredded Swiss cheese over vegetables during last 5 minutes of baking.<br />
Grill Meathod :Transfer vegetables to a perforated grill basket. Grill for 15 minutes, or until nicely browned, stirring 2 or 3 times. Remove from grill and transfer vegetable mixture to a large bowl. Add cheese (if using), Mix well.<br />

<p>Phase 3 recipe</p>

<p>1 egg<br />
1/2 tsp garlic<br />
1/2 tsp pepper<br />
2 lbs. (white) fish<br />
3/4 C. grated parmesan cheese<br />
1 Tbsp. Olive oil<br />
2 Tbsp. chopped parsley<br />
1 lemon, cut into wedges</p>
<p>Beat egg with garlic and pepper. Coat fish fillets with egg mixture and roll in the parmesan cheese to coat. Let sit at least 5 minutes. Heat oil on medium heat in large skillet and cook fillets until browned. Turn the fillets over to brown other side. Sprinkle with parsley and lemon.</p>

<p>asparagus (allowed amount)<br />
juice of one lemon<br />
2 lemon slices<br />
1 t oregano<br />
salt/pepper<br />
Other spices<br />
Preheat the oven to 400F.</p>
<p>Snap off woody ends of asparagus and discard.</p>
<p>Tear off a large sheet of non-stick aluminum foil.</p>
<p>In the center of this sheet, place asparagus spears and sprinkle with salt/pepper.</p>
<p>Place whitefish on top of asparagus.</p>
<p>In small bowl, combine lemon juice &amp; oregano, and pour over fish.</p>
<p>Fold up edges and completely seal packet on all sides.</p>
<p>Bake 10-20 mins, until fish flakes.</p>
<p>Serve.</p>

Sliced strawberries<br />

Dash of cayenne (optional)<br />
Fresh ground black pepper to taste<br />
Stevia to taste<br />
Directions<br />
Combine all ingredients in food processor. Puree until smooth. Pour over<br />
fresh arugala or green salad. Garnish with sliced strawberries and freshly<br />
ground black pepper. Variations: use as a marinade or sauce for chicken.<br />
Makes 1-2 servings (1 vegetable, 1 fruit)</p>

<p>Stir fry Steak and Asparagus</p>
<p>3.5 oz. steak sliced thin<br />
Marinate with the following<br />
2 Tbs Liquid aminos<br />
add to taste:<br />
fresh garlic<br />
onion powder<br />
garlic powder<br />
salt/pepper<br />
small chopped pieces of onion<br />
Other spices<br />
8-10 stalks of asparagus<br />
2 Tbs of MCT oil or chicken broth</p>
<p>Place the beef in a bowl and mix in the spices and liquid amino&#8217;s. Stir with your fingers, working the seasonings into the meat.</p>
<p>Wash the asparagus. Cut into halves crosswise. Separate the upper from the lower halves of the stalks.<br />
Heat the oil in a wok/skillet. When hot, add the fresh garlic and chopped onion until fragrant. Add the beef, with the marinade, and stir fry (over very high heat) for about a minute or just until the meat is no longer pink. Remove the meat with a slotted spoon and transfer to a plate. Keep warm.</p>
<p>In the remaining oil and seasoning, add the lower half of the asparagus stalks. Add about 1/8 c. of water and simmer for about 2-3 minutes. Add the upper halves of the asparagus and stir. Cook, uncovered, for another minute.<br />
Return the beef to the work and stir with the vegetables. Cook just until the beef is reheated.</p>

<div>Other spices</div>
<div>2  eggs</div>
<div>1 egg white</div>
<div>Remove and discard the tough lower ends of the asparagus. Wash and cut the spears into 1-1/2-2 inch lengths. In a heavy skillet, sauté the asparagus spears in MCT oil, sprinkling them lightly with salt. Cover the pan and cook over medium hear, stirring occasionally, until asparagus is tender but still firm, about 3 minutes.</div>
<div>Add the green onion to the asparagus, cook for 5 minutes on low.Beat the eggs lightly in a bowl, with salt and pepper. Add the eggs to the asparagus, scrambling the mixture lightly with a fork. Cook 2 minutes or less, depending on the texture desired.</p>

<p>100 grams cubed chicken</p>
<p>2 Tbs Liquid Aminos</p>
<p>Asparagus chopped</p>
<p>2 Tbs MCT oil  or  ½ cup chicken broth or water</p>
<p>1 Melba toast crushed (optional)</p>
<p>1 clove garlic crushed and minced</p>
<p>2 tablespoons onion chopped</p>
<p>Dash of onion powder</p>
<p>Dash of paprika</p>
<p>Salt and pepper to taste</p>
<p>Directions</p>
<p>Place chicken in Liquid Amino&#8217;s to marinate for an hour adding garlic if desired.  Add Chicken to asparagus, liquids, and spices and pour into small baking</p>
<p>dish.  Bake at 375 degrees for 30 minutes or until bubbly and hot. Top with</p>
<p>crushed Melba toast crumbs and sprinkle with paprika.</p>

<div>Preheat oven to 450*  Snap off tough cut ends of asparagus.   Place asparagus on a foil lined baking sheet.  Squeeze the juice of the lemon along with some fresh garlic over asparagus. Place in oven for 5-8 minutes, depends on size of stalk.  Remove from oven ,  mix  MCT and Onion soup together, and pour over Asparagus, toss asparagus lightly in pan.  Place back in over to finish cooking.  5-8 minutes, again, depends on stalk and desired crispness.</div>

<p><strong>Grilled Skirt Steak/Flank Steak</strong></p>

<li>100 grams or 3.5 oz of Skirt Steak</li>
</ul>

<li>Seasoning salt/other spices</li>
</ul>

<div>Dry the meat very well before grilling (to get a nice brown crust) and because the steak is relatively thin, you&#8217;ll need to cook it uncovered and over very high heat. A couple of minutes per side should be sufficient for medium rare.</div>
<div>
<p><strong>Roasted Asparagus</strong></p>
<div>
<ul>
<li>8-10 Stalks asparagus spears</li>
</ul>
</div>
<div style="text-align: left;">
<ul>
<li>1/2 Red onion, thinly sliced</li>
</ul>
</div>
<div>
<ul>
<li>1 Tbs MCT oil ( if you have it) this replaces Olive Oil</li>
</ul>
</div>
<div>
<ul>
<li>Fresh garlic</li>
</ul>
</div>
<div>
<ul>
<li>Salt and pepper to taste</li>
</ul>
</div>
<div>
<ul>
<li>Juice of one lemon</li>
</ul>
</div>
<div>Preheat oven to 500*  Snap off tough cut ends of asparagus.   Place asparagus on a foil lined baking sheet.  Drizzle with MTC oil , garlic and  spices.  Toss gently.  Add red onions on top for a bit more flavor and squeeze desired amount of lemon juice.  Bake for 8-12 minutes ( larger stalks take longer) or until roasted.</div>

<p><strong>Directions:</strong></p>
<p>Combine the asparagus and water in a 10-inch skillet and place over medium heat; cover. Allow the asparagus to steam until tender, about 10 minutes; drain. Reduce heat to low and return the skillet to the heat. Drizzle oil over the asparagus; sprinkle with Parmesan cheese. Add the grape tomatoes to the skillet and replace the lid. Allow to sit covered until the cheese melts and the tomatoes are slightly steamed, about 2 minutes.</p>
