So, I tried it with Farro and everyone loved it! This makes for a very healthy recipe the whole family can enjoy!

Ingredients: P3 Stabilized

1 cup Farro
2 1/2-3 cups water
2 Tbsp. organic butter
2 tsp. sea salt
1 tsp. pepper
1 Tbsp. coconut flour
1/2 c. coconut milk
1 c. onion, chopped
1 c. celery, chopped
1 c. peas
3 whole large chicken breast, cooked and diced
1 bunch broccoli, slightly steamed OR 1 10 oz. pkg. frozen broccoli, cooked
1/2 c. white cheese, grated (I used White Cheddar)

In a medium saucepan, combine Farro, celery, water and 1 teaspoon salt. Heat to boiling. Cover and simmer for about 8 minutes, or until Farro is tender and water is absorbed.

Melt butter in a medium saucepan or skillet. Saute chicken for about 1 minute; stir in coconut flour, pepper, and remaining 1 teaspoon salt. Continue to cook, stirring constantly. Stir in coconut milk and 1 1/3 cups water. Continue cooking and stirring until sauce thickens and gently boils for about 1 minute. Place Farrow mixture into a 9 x 13 pan. Add chicken with sauce mixture. Sprinkle with cheese and bake at 375° for 20 minutes.

Don’t overlook having fiber in your diet. Fiber helps to slow down, and sometimes even block, the absorption of some calories.

There are so many sources of fiber. Fruit is good, the best being an apple, but also blueberries, strawberries and raspberries. Green veggies such as broccoli and leafy greens. Other great sources are beans, although some stay away from beans while under maintenance as they are more starchy. Flax seeds and chia seeds are excellent sources of fiber, try adding them to yogurt, protein shakes or my steel cut oats.

Tonight was a big step for my p4 journey Olive Garden. My husband who has been held ransom for months on where we eat said how about Olive Garden?… I prayed on the way they had something on the menu I would feel comfortable eating. I will have to admit its tempting but I looked for their olive leaf light menu and I was very happy with my choice. The best part was when I got home and looked up the calories it was only 380. I skipped the veggies pretty much since I had salad which was 120 calories according to their website.

I was happy that there are healthy options out there we just have to chose them. They are nice enough to share their recipes so you can cook them at home. This would be great for P3 and P4.
