<p class="wp-block-paragraph">Tried and true, cinnamon has a long history as both a spice and a medicine.</p>



<p class="wp-block-paragraph">Moses used it as an ingredient in holy anointing oils (Exodus 30:22-25). Cleopatra (69-30 B.C.) is said to have carried cinnamon with her jewels. During the Roman Empire, cinnamon bark was burned as incense in the temples and wealthy Romans used it in their baths.</p>



<p class="wp-block-paragraph">Cinnamon offers many health benefits such as:</p>



<ul class="wp-block-list"><li>Antifungal, antibacterial and anti-parasitic properties</li><li>Anti-inflammatory properties</li><li>Excellent source of manganese, dietary fiber, iron and calcium</li><li>Reduces blood sugar, triglyceride and cholesterol levels</li><li>Treats digestive disorders such as indigestion, flatulence, diarrhea, and loss of appetite</li><li>Aids in digestion by stimulating saliva and gastric juices</li><li>Improves general circulation</li></ul>



<p class="wp-block-paragraph">Doctors have even suggested that even smelling cinnamon can improve memory and performance of certain tasks!</p>



<p class="wp-block-paragraph">But did you know there is more than one kind of cinnamon? The two most popular are: Ceylon (True) Cinnamon which comes from the bark of the Cinnamomum zeylanicum tree in Sri Lanka, and Cassia (Chinese) Cinnamon which comes from the bark of the Cinnamomum cassia tree grown in China and Indonesia. When we go to the grocery store’s spice aisle, we are typically purchasing the harsh and pungent Cassia Cinnamon.</p>



<p class="wp-block-paragraph">Both varieties share some benefits, however, the aroma and taste of Ceylon are far more appealing.</p>

<p class="wp-block-paragraph">Cinnamon can be a very pleasant and beneficial addition to our menus, but be sure to use in moderation; in large doses, Cassia cinnamon may actually cause health damages and negatively impact the liver and kidneys.</p>

<div><strong>Quick Apple Snack</strong></div>
<div>1 organic apple</div>
<div>1 Tbsp peanut or Almond butter</div>
<div>Slice up the apples and spread each slice with the peanut or Almond butter or dip the apple into the butter.</div>

<div>3 Apples</div>
<div>1/4 C. water</div>
<div>1/2 C raw almonds, chopped</div>
<div>1/2 tsp raw honey</div>
<div>1/2 &#8211; 1 tsp Apple Pie spice</div>
<div>Core and slice apples into thin slices. Cook apples and water in a small saucepan over medium heat.</div>
<div>When mixture comes to a boil, reduce heat and stir in rest of ingredients. Cook on low heat for about 15 minutes.</div>
<div>Great served warm with some Greek Yogurt.</div>
<div></div>
<div><strong>Baked Apples<br />
</strong></div>
<div>4 Apples, sliced</div>
<div>1/4 C chopped raw nuts (pecans and walnuts are my favorite)</div>
<div>2 Tbsp lemon juice</div>
<div>1 tsp ground cinnamon or Apple Pie Spice.</div>
<div>1 Tbsp honey or maple syrup</div>
<div>Core apples and place in a small baking dish.&nbsp;Stand apples in small ovenproof dish, pour a little water around them. In a small bowl mix the nuts, lemon juice and spice. Fill apples with mixture. Drizzle &nbsp;honey or maple syrup over the top. Bake for 25-30 mins. Great served with Greek Yogurt.</div>

<p>Phase 3 stabilized (after 21 days) and Phase 4</p>
<p>3/4 C. Flax Seed Meal<br />

1 Tbsp. Cinnamon<br />
1 tsp nutmeg<br />
1/2 tsp salt<br />
3/4 C. Rapadura Sugar<br />
4 Large eggs, eggs<br />
1/4 C. extra virgin olive oil<br />
1/2 C. water<br />
1 Tbsp. pure Vanilla extract<br />
1 medium apple, cored and cubed<br />
1/2 C. walnuts or pecans, chopped<br />
1/2 C. raisins (optional)</p>
<p>Mix dry ingredients and add the rest of the ingredients. Let stand for 5-10 minutes. Pour batter in muffin pan and bake for 15-18 minutes until done.</p>

<div>If you have not tried<a href="http://foodforlife.com" target="_blank" rel="noopener"> Ezekiel bread </a>I highly recommend it.  Carol uses it for her french toast recipe and may other recipes.  It is a great way to reintroduce grains once you are stable.  Many can add in Ezekiel bread early on in P3 and stay in or below their LDW.</div>

1/4 cup Ricotta Cheese<br />
4-6 drops stevia<br />
1/2 tsp. Baking Powder<br />
1/4 tsp. Cinnamon<br />
1/8 tsp. Nutmeg<br />
Add all ingredients to beaten eggs and mix until well blended. Spray waffle maker with MCT or other cooking spray. Pour into waffle maker and cook as usual. I have also done this like pancakes. Just as yummy! Top with toppings of choice: butter and strawberries, In Phase 4 you can add blueberries, no-sugar added syrup. For syrup use 100% pure maple syrup, honey DiVinci&#8217;s are yummy too.</p>
<h4>Healthy P2 Friendly Strawberry Jam</h4>
<p>Take a handful of Strawberries, cinnamon, Stevia, 1/2 tbs lemon juice, blend together, or put it all in a zip lock bag, smash it all up and &#8230;voila&#8230;.Strawberry jam</p>
