<p>Coconut flour is very low in  carbohydrates, contains no gluten, as has a high fiber content  and is  a good source of protein. It is made from finely ground coconut meat with most  of the moisture and fat removed. It can be used for cooking and baking much like  bleached, enriched flour which is flour stripped of all nutritional parts and  then the manufacturer adds back in a few vitamins required by law and then they  call it &#8216;Enriched Flour&#8217;!!</p>

<h3>Garlic Chicken Pizza for Phase 3</h3>
<p><strong>Crust</strong>:<br />
2 cups mozzarella cheese, shredded<br />
2 large organic eggs<br />
2 Tbsp. ground flax seeds (flax meal)<br />
2 Tbsp. coconut flour<br />
1/2 tsp. baking powder</p>
<p>Preheat oven to 350. Mix ingredients together and make a pizza shape on a baking sheet. Bake for 30 minutes. Remove from oven and top with the sauce and toppings (see below).</p>
<p><strong>Sauce</strong>:<br />
2 Tbsp. butter or margarine, softened<br />
2 cloves garlic, minced<br />
2 Tbsp. chopped green onion<br />
1/2 tsp. dried basil</p>
<p>Heat in a small saucepan on low heat until the butter is melted. Add the garlic, onion, and basil and mix until blended. Pour into a chilled dish to cool, and refrigerate until set. When set, spread over the crust and add toppings.</p>
<p><strong>Toppings</strong>:<br />
1 skinless, boneless chicken breast cooked and cut into bite size pieces.<br />
2 Roma tomatoes, diced<br />
1/2 cup chopped fresh cilantro<br />
1/2 cup ricotta cheese<br />
1/4 cup grated Parmesan cheese</p>
<p>Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese. Bake for 15 to 20 minutes or until center is cooked through.</p>
