<p>Salt and freshly ground pepper to taste</p>

<div>Dash  of Onion powder</div>
<div>Dash of  Garlic Powder</div>
<div>Other spices</div>
<div>2  eggs</div>
<div>1 egg white</div>
<div>Remove and discard the tough lower ends of the asparagus. Wash and cut the spears into 1-1/2-2 inch lengths. In a heavy skillet, sauté the asparagus spears in MCT oil, sprinkling them lightly with salt. Cover the pan and cook over medium hear, stirring occasionally, until asparagus is tender but still firm, about 3 minutes.</div>
<div>Add the green onion to the asparagus, cook for 5 minutes on low.Beat the eggs lightly in a bowl, with salt and pepper. Add the eggs to the asparagus, scrambling the mixture lightly with a fork. Cook 2 minutes or less, depending on the texture desired.</p>

<p>Brown ground beef. Add onion, garlic and spices and a little water.  Simmer for 5-10 minutes. Add salt/pepper to taste.  Serve taco style in romaine leaf or lettuce tortillas.  optional * serve with side of tomatoes or salsa<br />
Makes 1 serving ( 1 protein, 1 vegetable)<br />
Phase 3 modifications: serve with cheddar cheese, sour cream( or Greek yogurt) and guacamole.</p>

<p>100 grams shrimp (chicken, beef, or chicken sausage can be used)</p>
<p>Tomatoes or celery chopped</p>
<p>1 cup vegetable broth or water</p>
<p>1 tablespoon lemon juice</p>
<p>1 tablespoon chopped onion</p>
<p>1 clove garlic crushed and minced</p>
<p>Dash of Worcestershire sauce</p>
<p>Dash of hot sauce</p>
<p>Dash of liquid smoke (optional)</p>
<p>Pinch of cayenne to taste</p>
<p>1/8 teaspoon garlic powder</p>
<p>1/8 teaspoon onion powder</p>
<p>Pinch of thyme</p>
<p>Salt and pepper</p>
<p>Water as needed</p>
<p>Directions</p>
<p>Lightly sauté shrimp or chicken with celery or tomatoes, garlic and onion in</p>
<p>lemon juice until cooked or lightly browned. Deglaze the pan with broth</p>
<p>and add seasonings. Simmer on low for approximately 20-30 minutes until</p>
<p>liquid is slightly reduced adding additional broth or water to achieve desired</p>
<p>consistency.</p>
<p>Makes 1 serving (1 protein, 1 vegetable, 1 fruit)</p>
<p>Phase 3 modifications: Add chopped red and green bell pepper and</p>
<p>additional seafood, chicken, sausage, etc.</p>

<p>10-12 stalks fresh Asparagus ( depends on size)  may want to add more if smaller stalks. 1 Tbs of MCT Oil</p>
<div>1 Tbs mock onion soup mix  ( see below)</div>
<div>1 juice of a lemon</div>
<div>fresh garlic</div>
<div>Preheat oven to 450*  Snap off tough cut ends of asparagus.   Place asparagus on a foil lined baking sheet.  Squeeze the juice of the lemon along with some fresh garlic over asparagus. Place in oven for 5-8 minutes, depends on size of stalk.  Remove from oven ,  mix  MCT and Onion soup together, and pour over Asparagus, toss asparagus lightly in pan.  Place back in over to finish cooking.  5-8 minutes, again, depends on stalk and desired crispness.</div>

<div>Mix sauce ingredients together and spread on Wasa Crackers. You can make single servings or line a 9 x 13 dish with crackers.  If you like a little crunch keep sauce off edges. Add toppings of choice and top with cheese. Bake at 350 degrees for 10-15 minutes until heated throughly and cheese is melted.</div>

<h2><em>Three Kinds of Fat</em></h2>
<p><em> In the human body we can distinguish three kinds of fat. The first is the structural fat which fills the gaps between various organs, a sort of packing material. Structural fat also performs such important functions as bedding the kidneys in soft elastic tissue, protecting the coronary arteries and keeping the skin smooth and taut, it also provides the springy cushion of hard fat under the bones of the feet, without which we would be unable to walk.<br />
The second type of fat is a normal reserve of fuel upon which the body can freely draw when the nutritional income from the intestinal tract is insufficient to meet the demand. Such normal reserves are localized all over the body. Fat is a substance which packs the highest caloric value into the smallest space so that normal reserves of fuel for muscular activity and the maintenance of body temperature can be most economically stored in this form. Both these types of fat, structural and reserve, are normal, and even if the body stocks them to capacity this can never be called obesity.<br />
<strong>But there is a third type of fat which is entirely abnormal.</strong> It is the accumulation of such fat, and of such fat only, from which the overweight patient suffers. This abnormal fat is also a potential reserve of fuel, but unlike the normal reserves it is not available to the body in a nutritional emergency. It is, so to speak, locked away in a fixed deposit and is not kept in a current account, as are the normal reserves.<br />
When an obese patient tries to reduce by starving himself, he will first lose his normal fat reserves. When these are exhausted he begins to burn up structural fat, and only as a last resort will the body yield its abnormal<br />
reserves, though by that time the patient usually feels so weak and hungry that the diet is abandoned. It is just for this reason that obese patients complain that when they diet they lose the wrong fat. They feel famished and tired and their face becomes drawn and haggard, but their belly, hips, thighs and upper arms show little improvement. The fat they have come to detest stays on and the fat they need to cover their bones gets less and less. Their skin wrinkles and they look old and miserable. And that is one of the most frustrating and depressing experiences a human being can have.</em></p>
<h2><em>Injustice to the Obese</em></h2>
<p><em> When then obese patients are accused of cheating, gluttony, lack of will power, greed and sexual complexes, the strong become indignant and decide that modern medicine is a fraud and its representatives fools, while the weak just give up the struggle in despair. In either case the result is the same a further gain in weight, resignation to an abominable fate and the resolution at least to live tolerably the short span allotted to them-a fig for doctors and insurance companies.<br />
Obese patients only feel physically well as long as they are stationary or gaining weight. They may feel guilty, owing to the lethargy and indolence always associated with obesity. They may feel ashamed of what they have been led to believe is a lack of control. They may feel horrified by the appearance of their nude body and the tightness of their clothes. But they have a primitive feeling of animal content which turns to misery and suffering as soon as they make a resolute attempt to reduce. For this there are sound reasons.<br />
In the first place, more caloric energy is required to keep a large body at a certain temperature than to heat a small body Secondly the muscular effort of moving a heavy body is greater than in the case of a light body. The muscular effort consumes Calories which must be provided by food. Thus, all other factors being equal, a fat person requires more food than a lean one. One might therefore reason that if a fat person eats only the additional food his body requires he should be able to keep his weight stationary. Yet every physician who has studied obese patients under rigorously controlled conditions knows that this is not true. Many obese patients actually gain weight on a diet which is calorically deficient for their basic needs. There must thus be some other mechanism at work.</em></p>

<p>Mashed Cauliflower</p>

1/2 cup water<br />
1/3 cup heavy whipping cream<br />
3/4 tsp salt<br />
1/4 tsp white pepper<br />
1/8 tsp garlic powder<br />
1/8 tsp onion powder</p>
<p>Divide a head of cauliflower into florets that are all roughly the same size.<br />
Steam cauliflower pieces over boiling water (15 to 20 minutes), or until the cauliflower is tender. Drain the cauliflower and toss it in a bowl of ice water to bring the cooking process to a screeching halt.</p>
<p>When the cauliflower has cooled, put the florets in a food processor along with 1/2 cup of water. Puree the cauliflower on high speed until smooth, but with some very small pieces of cauliflower remaining in the mix for just a bit of texture.</p>
<p>Pour all of the pureed cauliflower into a medium sauce pan.</p>
<p>Add the cream, salt, white pepper, garlic powder and onion powder to the cauliflower and stir. Set the saucepan over medium heat and cook, stirring often, for 5 to 10 minutes, or until thick.</p>
