Phase 3 Staibilized

I used to love granola for breakfast and then I learned how much sugar was in granola and I stopped eating it. And here I thought it was a healthy choice! But now I can have it again! With the right ingredients and the proper preparation, granola is healthy. I purchase all my nuts and seeds raw so I don’t have to consume the horrible canola oil so many manufacturers use when roasting their nuts. (Read more here) This granola recipe is yummy and a lot more healthy than purchased granola.
2 cups rolled oats (not the quick type)
1 cup unsweetened coconut flakes
1/2 cup chopped raw pecans
1/2 cup chopped raw walnuts
1/2 cup sliced raw almonds
1/2 cup raw pepitas (toasted – see below)
3 Tbsp. sesame seeds
2 Tbsp. flax seeds – ground (flax seed meal)
2/3 cup coconut oil (liquid state)
1/4 cup raw honey
1 tsp. liquid stevia

Mix the pepitas in small bowl with 1 tablespoon coconut oil. Spread out on a cookie sheet and roast at 250 degrees for 30 minutes or until nicely toasted. Mix the remaining dry ingredients together and then add the coconut oil, natural sweeteners and stevia.

Adding Cauliflower to your daily diet is one of the best veggies. While often overlooked, it has amazing health benefits.

Health Benefits- (Article by Whole Foods)

While cauliflower is not a well-studied cruciferous vegetable from a health standpoint, you will find several dozen studies linking cauliflower-containing diets to cancer prevention, particularly with respect to the following types of cancer: bladder cancer, breast cancer, colon cancer, prostate cancer, and ovarian cancer. This connection between cauliflower and cancer prevention should not be surprising, since cauliflower provides special nutrient support for three body systems that are closely connected with cancer development as well as cancer prevention. These three systems are (1) the body’s detox system, (2) its antioxidant system, and (3) its inflammatory/anti-inflammatory system. Chronic imbalances in any of these three systems can increase risk of cancer, and when imbalances in all three systems occur simultaneously, the risk of cancer increases significantly.

Detox Support Provided by Cauliflower

The detox support provided by cauliflower includes antioxidant nutrients to boost Phase 1 detoxification activities and sulfur-containing nutrients to boost Phase 2 activities. Cauliflower also contains phytonutrients called glucosinolates that can help activate detoxification enzymes and regulate their activity. Three glucosinolates that have been clearly identified in cauliflower are glucobrassicin, glucoraphanin, and gluconasturtiian. While the glucosinolate content of cauliflower is definitely significant from a health standpoint, cauliflower contains about one-fourth as much total glucosinolates as Brussels sprouts, about one-half as much as Savoy cabbage, about 60% as much as broccoli, and about 70% as much as kale.

If we fail to give our body’s detox system adequate nutritional support, yet continue to expose ourselves to unwanted toxins through our lifestyle and our dietary choices, we can place our bodies at increased risk of toxin-related damage that can eventually increase our cells’ risk of becoming cancerous. That’s one of the reasons it’s so important to bring cauliflower and other cruciferous vegetables into our diet on a regular basis.

This happens to all of us at one point while on protocol. What to do if you are sick? My family has had a stomach flu and head colds this week and here are some tips for staying on protocol when you feel sick. I relied heavily on the cabbage chicken soup. Make sure and get the sugar free organic broth. I get mine from the diabetic isle at the grocery store.

100 grams chicken
2 C. Cabbage
2 C. Low Sodium Chicken Broth (or 1 C. Water, 1 C. broth)
2 Tbsp Bragg’s amino acids
2 cloves garlic, minced
1 Tbsp. Chopped onion
Seasonings to taste: Garlic powder, onion powder, paprika, Mrs. Dash, salt & pepper

Cook chicken in broth mixture along with spices. Let simmer for a few minutes after the chicken is fully cooked. Add cabbage and cook until desired tenderness of cabbage.

For those in the house not on protocol, I boil Egg Noodles and made real chicken noodle soup for them. Even with the cabbage it was well received.

I purchased the Bentley’s Tea Leaves for Life tin at Linens and Things full of antioxidant power green teas, but later found it on Amazon. Sipping hot tea has always been a great cure for the common cold and green tea is best for this. The flavors available Oriental Green, Pomegranate, Mango, Papaya, Raspberry and Blueberry. The kids even loved the fruity teas.

I recommend oranges for their high vitamin C and help in fighting off the common cold.

Note that being sick can make your weight stall, lose more than normal and some may even retain water and gain. Give yourself three days to recover once you are over your flu to get accurate results on the scale.

1/4 C. butter, melted
6 boneless chicken breasts
6 oz goat cheese with herbs
1/2 C sesame seeds
1 tsp. extra virgin olive oil

Roasted Red Pepper Sauce
Roasted red bell peppers (a 7oz jar)
1 clove garlic, chopped fine
1 pkg. stevia
1/4 tsp salt
pinch of cayenne pepper
1 Tbsp sour cream

Heat oven to 425. Spray rectangular pan 13x9x2 with cooking spray. Place melted butter in large, shallow bowl.

Cut a horizontal slit in each chicken breast making a pocket and add the cheese. Dip each breast into the butter and sprinkle both sides with sesame seed. Cook chicken in a skillet with heated oil until brown on both sides. Place chicken breasts in rectangular pan and drizzle with any remaining butter. Bake uncovered 15-20 minutes until chicken is no longer pink in center.

To make the red pepper sauce, place all ingredients except sour cream into a mini food processor or blender. Cover and process until smooth. Heat mixture in 1-quart saucepan over medium heat, stirring occasionally, until hot; remove from heat and stir in sour cream.
