<p>5 links Sugar Free Sausage<br />
Coconut, MCT or olive oil, for browning sausage<br />
1 small onion, diced small<br />
1 Tbsp. chopped garlic<br />
2 cups diced zucchini<br />
4 cans chicken broth<br />
2 cans diced tomatoes (with juice)<br />
1-2 cups water<br />
2 tsp. dried oregano<br />
2 tsp. dried basil (I also use fresh basil &#8211; about 3 leaves)</p>
<div>Grated Parmesan cheese for topping soup (optional)</div>
<div>Brown sausage links in oil in until browned. Cut in slices and place sausage back in frying pan and brown both sides of slices. Combine chicken stock, tomatoes, oregano, and basil in medium stock pot and simmer. Add browned sausage. Put onions in pan you used to brown sausage and saute 3-4 minutes, then add minced garlic and cook 1-2 minutes more. Add to soup. Simmer 30 minutes. Cut ends off zucchini and cut lengthwise into fourths, then slice. Add zucchini to soup and simmer 15 minutes. Taste soup for flavor and add 1-2 cups of water if needed. Stir in fresh basil (if using) and cook 5 minutes more. Serve soup with fresh grated Parmesan cheese if desired.</div>

<p>4-6 medium strawberries</p>
<p>Approximately 3 cubes of ice</p>

<p>Phase 3 modifications: Add half and half or cream and whipped egg whites.</p>

<div><strong>Cinnamon Chicken</strong></div>
<p>Ingredients</p>
<p>100 grams of chicken</p>
<p>1 serving Melba toast crumbs</p>
<p>½ cup chicken broth or water</p>
<p>¼ teaspoon ground cinnamon</p>
<p>Pinch of nutmeg</p>
<p>Pinch of cardamom</p>
<p>1/8 teaspoon curry powder</p>
<p>Dash of garlic powder</p>
<p>Salt and pepper to taste</p>
<p>Stevia to taste</p>
<p>Directions</p>
<p>Mix Melba toast crumbs with ½ of the dry spices in a small bowl. Dip</p>
<p>chicken in broth and coat with Melba spice mixture. Lay out 100 gram</p>
<p>servings in shallow baking dish. Add broth and mix in the rest of the spices.</p>
<p>Top the chicken with the rest of the Melba spice mixture. Bake chicken at</p>
<p>350 degrees for 20 minutes or until chicken is fully cooked.</p>
<p>Makes 1 serving (1 protein 1 Melba toast)</p>

Preheat waffle iron. (Can also be made into pancakes.) Beat eggs with electric mixer or whisk to make them light and fluffy. Add all other ingredients and beat until smooth. Spray waffle maker with MCT oil or other cooking spray. Pour in batter and cook as usual for waffles.</p>

<p>4 Boneless, skinless chicken breasts<br />
1/4 cup MCT Vinaigrette Dressing (see recipe below)<br />
1 1/2 cups Fresh Parmesan Cheese, finely shredded<br />
1 Tbsp dried Parsley Flakes1 tsp Italian Seasoning<br />
Dash Garlic &amp; Herb (or other garlic seasoning)<br />
Pour salad dressing into a plate and set aside.</p>
<p>Mix parmesan cheese and seasonings together in a separate dish. Dip each chicken breast in salad dressing and then dip into parmesan mixture coating both sides.</p>
<p>Place in greased baking dish. Bake at 350 degrees for 30-35 minutes or until chicken is done.</p>
<p>MCT Vinaigrette Dressing<br />
1/2 cup MCT oil<br />
1/2 cup cider vinegar<br />
2-4 Packages Stevia<br />
3/4 teaspoon salt<br />
3/4 teaspoon dry mustard<br />
1/8 teaspoon pepper<br />
Shake all ingredients together vigorously in a covered jar.  Shake before each use.</p>

<h2>Chicken Breasts With Stuffed Spinach and Goat Cheese</h2>
<p>2-3 teaspoons Coconut or MCT oil<br />
2 garlic cloves, minced<br />
1 (1/2 pound) bunch spinach, tough stems removed<br />
4 (6-ounce) boneless, skinless chicken breasts<br />
4 ounces low-fat goat cheese<br />
Salt and freshly ground black pepper</p>
<p><strong>Instructions</strong><br />
Heat oven to 400°F.</p>
<p>Heat 1 teaspoon of the oil in a large ovenproof skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Stir in spinach and cook, stirring constantly, until spinach is wilted and liquid evaporates, about 2 minutes. Season the spinach well with salt and pepper and transfer to a plate. Wipe skillet dry with paper towels.</p>
<p>Beginning at the thickest end of 1 chicken breast, carefully insert a sharp knife into center and cut a pocket as evenly as possible, leaving a 1-inch border on three sides. Repeat with remaining breasts. Open each pocket, sprinkle with salt and pepper, then fill evenly with goat cheese and spinach. You may need to seal each with two toothpicks and season outside with salt and pepper.</p>
<p>Heat the remaining oil in the same skillet over medium-high heat. Add chicken and cook, turning once, until well browned on both sides, about 3 minutes per side. Transfer the skillet to the oven and bake until juices run clear, about 8 minutes.</p>
