<p>(Makes 6-8 servings) Phase 3 and Phase 4</p>

<p>2-3 med/large zucchini</p>
<p>2 tsp. + 2 tsp. olive oil (may need more, depending on your pan)</p>
<p>1/2 cup finely chopped onion</p>
<p>1 green pepper, finely chopped</p>
<p>2 T finely minced fresh garlic</p>
<p>1 lb. ground beef (10% fat or less)</p>
<p>12 oz. ground turkey (10% fat or less)</p>
<p>2 C flavorful tomato-basil pasta sauce, sugar free</p>
<p>2 cups mozzarella or other mild cheese</p>
<p>Preheat oven to 350F/175C. Chop onion and green pepper. Heat 2 tsp. olive oil in a non-stick pan, then saute onion and pepper for 3-4 minutes, until just starting to soften. Add minced garlic and saute about 1 minute more, being careful not to brown the garlic. Remove the onion, pepper, and garlic mixture to a bowl.</p>
<p>Add 2 tsp. more olive oil to the pan. Crumble in the ground beef and ground turkey, season and cook over medium heat until the meat is well browned. Tilt pan to see if there is any extra fat, and remove with a spoon if there is, then stir cooked vegetables and garlic back into the meat. Add tomato sauce and simmer until the mixture has thickened and liquid has cooked off, about 10 minutes, then turn off heat while meat cools, cut zucchini into slices, discarding ends. Place in shallow baking dish. Stir 1 1/2 cups grated cheese into the cooled meat mixture (it doesn&#8217;t need to be completely cool), then spoon the meat-cheese mixture over zucchini.</p>
<p>Bake zucchini for 20 minutes, then remove from oven and use remaining cheese to top each one with a generous sprinkle of cheese. Put back in oven and bake 10-15 minutes more, until zucchini is slightly soft when pierced with a fork and cheese is melted and lightly browned. Serve hot.</p>

<p>I have had many people ask me how I eat on P4 and I have to say its similar to P2 and P3.  I really just concentrate on eating healthy.  Do I spluge from time to time, yes!  I thought it would be helpful to just share for what I am eating and document any side effects from it.  I am a little more simple and just make stuff up as I go along.  I do not own a recipe book and do not research recipes,  I am however great at throwing things together.  Yesterday I shared my Taco Salad and today for lunch I went in and threw together these lettuce wraps.  I am sure there many different ways you can make lettuce wraps and make them work for any phase.</p>

<div class="mceTemp">3 Large lettuce leaves</div>
<div class="mceTemp">2 Pieces of Pepper Jack Cheese (or cheese of your choice)</div>
<div class="mceTemp">1 Medium sliced tomato</div>
<div class="mceTemp">Salt and pepper to taste</div>
<div class="mceTemp">Lunch meat or meat of your choice</div>
<div class="mceTemp">I laid the lettuce beds open and stacked the meat, cheese and added thin sliced tomatoes.  I added salt and pepper.  The pepper jack cheese gives them a little kick.  I did not add any sauce as the tomato adds enough juice to make it just right.   I hold the lettuce leaves together with a toothpick and add the extra tomato as the side.   If you wanted to make a lettuce wrap P2 then make the meat chicken or beef, no cheese and add tomatoes.  This is a quick way to eat healthy without a lot of thought or time and its delicious.  I have found lettuce a great tortilla and bread replacement.</div>

<p>1/4 &#8211; 1/2 cup mixture of chopped onion, green peppers and red peppers</p>

2-3 eggs, lightly beaten<br />
salt and pepper to tasteIn a large heavy skillet, cook bacon over moderate heat until crisp.  Remove bacon pieces and place on paper towels to drain. Pour off all but about 2 tablespoons of bacon drippings.  Add the veggie mixture to bacon drippings and cook, stirring gently, until the veggies are tender.  Add tomatoes and cook one more minute, stirring constantly. Add the eggs and cook, stirring gently, until eggs are almost set.  Sprinkle on the shredded cheese and stir until melted.  Season with salt and pepper.  Sprinkle on the crumbled bacon and a little more cheese if desired. Serve and enjoy!</div>

<li>1/2 cup grated Parmesan cheese (for Phase 3 or Phase 4)</li>
<li>10 grape tomatoes, halved</li>

<p><strong>Directions:</strong></p>
<p>Combine the asparagus and water in a 10-inch skillet and place over medium heat; cover. Allow the asparagus to steam until tender, about 10 minutes; drain. Reduce heat to low and return the skillet to the heat. Drizzle oil over the asparagus; sprinkle with Parmesan cheese. Add the grape tomatoes to the skillet and replace the lid. Allow to sit covered until the cheese melts and the tomatoes are slightly steamed, about 2 minutes.</p>
