Vegetable Stir Fry Quinoa

Organic Quinoa (pronounced keen-wah) is a high-protein food. Although usually referred to as a whole grain, it is actually a seed, but can be prepared like whole grains such as rice. Quinoa is a great substitute for rice when you are ready to introduce a new grain. Whole grains provide fiber and help satiate you. They also slow down absorption of blood sugar.

Vegetable Stir Fry

1 C. Quinoa
1 1/2 C. water
2 Tbsp. Coconut Oil
Stir fry veggies (I used green and red peppers, onion, zucchini, snap peas, squash and carrots)
2 Tbsp. Bragg Ginger Sesame Dressing
2 tsp. Braggs liquid Aminos (to taste)
Sea Salt & Pepper to taste

Place the quinoa in water and soak for 15 minutes. If you don’t have 15 minutes, soak in warm water for 5 minutes. Rinse and strain. Return to saucepan and add water, cover and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes. In a separate wok or saute pan, cook veggies in coconut oil until done but crisp. Add Braggs and mix together. Spoon over Quinoa.

    Thanks I was looking for a substitute for Rice. This might be what Im looking for in my recipe.

    I am doing maintenance now, and excited to introduce healthy grains. But I am a little nervous about always using coconut oil- it’s so high in saturated fat. Do you know if it raises bad cholesterol? Olive oil is what I’m used to using, and it has 2 grams of saturated fat versus 12. Any thought?
