<p>Recommend stabilized in Phase 3 for several weeks.</p>
<p>4 c. fresh spinach<br />
1/2 red onion, sliced<br />
1 pt. strawberries, sliced<br />
<strong> Dressing:</strong><br />
1/2 c. Safflower mayonnaise<br />
1/4 c. milk<br />
1/2 c. organic whole cane sugar (such as Rapadura)<br />
1 1/2 Tbsp. Greek Yogurt<br />
2 Tbsp. apple cider vinegar<br />
1 to 2 Tbsp. poppy seeds</p>
<p>Put spinach, strawberries and onion in bowl. Combine dressing ingredients. Pour dressing over just before serving.</p>

<p>Broccoli Apple Salad</p>
<p>4 C. broccoli florets<br />
1/2 C. red onion, diced<br />
2 Tbsp. Extra Virgin Olive Oil<br />
2 Shallots, chopped<br />
2 garlic cloves, chopped<br />
1 Green apple, cored and diced<br />
1/4 C. peanuts</p>
<p>Dressing:<br />
1/4 C. all natural peanut butter<br />
1 Tbsp. raw honey<br />
1/3 C. hot water</p>
<p>Mix the broccoli and red onions and coat with 1 Tbsp. oil. Place on a cookie sheet and bake for 5-7 minutes, turning occasionally. While broccoli is cooking, cook the shallots and garlic in a small skillet with remaining oil until slightly browned. Mix in with broccoli and onion mixture and add the apple and peanuts. In a small bowl mix the dressing until well blended. Toss salad with dressing and serve.</p>

<p>1 bunch of Romaine lettuce<br />
1 c. tomatoes, chopped<br />

<p><strong>Sweet ‘n Sour Vinaigrette Salad Dressing</strong> 1-3 Tbsp. Raw Organic Apple Cider Vinager Seasonings of choice (Salt, pepper, Mrs. Dash) 1 packet of natural sweetener (Sevia, Xylitol) Mix ingredients in a small container and shake well. Drizzle over salad, spinach, vegetables, etc.</p>

Cut up chicken into tiny bite size pieces, fry them in the pan with the spices.  Adding lemon juice to flavor.  Fry until completely cooked.<br />
Prepare lettuce and add the chicken to the lettuce, either warm or cooled.   Use the rest of the lemon on top for extra flavor.  May top with small amount of salsa if desired.</p>

<p>1/4 C. butter, melted<br />
6 boneless chicken breasts<br />
6 oz goat cheese with herbs<br />
1/2 C sesame seeds<br />
1 tsp. extra virgin olive oil</p>
<p>Roasted Red Pepper Sauce<br />
Roasted red bell peppers (a 7oz jar)<br />
1 clove garlic, chopped fine<br />
1 pkg. stevia<br />
1/4 tsp salt<br />
pinch of cayenne pepper<br />
1 Tbsp sour cream</p>
<p>Heat oven to 425. Spray rectangular pan 13x9x2 with cooking spray. Place melted butter in large, shallow bowl.</p>
<p>Cut a horizontal slit in each chicken breast making a pocket and add the cheese. Dip each breast into the butter and sprinkle both sides with sesame seed. Cook chicken in a skillet with heated oil until brown on both sides. Place chicken breasts in rectangular pan and drizzle with any remaining butter. Bake uncovered 15-20 minutes until chicken is no longer pink in center.</p>
<p>To make the red pepper sauce, place all ingredients except sour cream into a mini food processor or blender. Cover and process until smooth. Heat mixture in 1-quart saucepan over medium heat, stirring occasionally, until hot; remove from heat and stir in sour cream.</p>

<p>I have had many people ask me how I eat on P4 and I have to say its similar to P2 and P3.  I really just concentrate on eating healthy.  Do I spluge from time to time, yes!  I thought it would be helpful to just share for what I am eating and document any side effects from it.  I am a little more simple and just make stuff up as I go along.  I do not own a recipe book and do not research recipes,  I am however great at throwing things together.  Yesterday I shared my Taco Salad and today for lunch I went in and threw together these lettuce wraps.  I am sure there many different ways you can make lettuce wraps and make them work for any phase.</p>

<div class="mceTemp">3 Large lettuce leaves</div>
<div class="mceTemp">2 Pieces of Pepper Jack Cheese (or cheese of your choice)</div>
<div class="mceTemp">1 Medium sliced tomato</div>
<div class="mceTemp">Salt and pepper to taste</div>
<div class="mceTemp">Lunch meat or meat of your choice</div>
<div class="mceTemp">I laid the lettuce beds open and stacked the meat, cheese and added thin sliced tomatoes.  I added salt and pepper.  The pepper jack cheese gives them a little kick.  I did not add any sauce as the tomato adds enough juice to make it just right.   I hold the lettuce leaves together with a toothpick and add the extra tomato as the side.   If you wanted to make a lettuce wrap P2 then make the meat chicken or beef, no cheese and add tomatoes.  This is a quick way to eat healthy without a lot of thought or time and its delicious.  I have found lettuce a great tortilla and bread replacement.</div>

<div>Cook the ground beef, onion and seasonings.  Once the ground beef is done pour in a can of drained Rotel and simmer.  Add the meat to the top of the lettuce bed add the cheese and let it melt.  Then add your other toppings and salsa.</div>

<p>Ingredients:</p>
<p>1 whole cucumber<br />
Sliced strawberries<br />
1 serving strawberry vinaigrette (see below)<br />
Fresh ground white pepper<br />
Stevia to taste<br />
Directions<br />
Slice strawberries and cucumber. Toss with strawberries, dressing, stevia<br />
and pepper to taste. You can also add,fresh dill, fresh mint ,ground cumin, sweet paprika to taste<br />
Allow to marinate for at least 10 minutes.</p>
<p>Strawberry Vinaigrette<br />
Ingredients<br />
Strawberries<br />
1 tablespoon apple cider vinegar<br />
1 tablespoon lemon juice<br />
Stevia to taste<br />
Dash of salt<br />
Dash of cayenne (optional)<br />
Fresh ground black pepper to taste<br />
Stevia to taste<br />
Directions<br />
Combine all ingredients in food processor. Puree until smooth. Pour over<br />
fresh arugala or green salad. Garnish with sliced strawberries and freshly<br />
ground black pepper. Variations: use as a marinade or sauce for chicken.<br />
Makes 1-2 servings (1 vegetable, 1 fruit)</p>
