Phase 2 recipe

Chicken Taco Salad

3.5 oz chicken
Juice of a lemon
Spices :
Chili powder
Fresh garlic
Seasoning salt
Onion powder
Minced onion
Paprika
Lettuce / spinach or both 🙂
Cut up chicken into tiny bite size pieces, fry them in the pan with the spices.  Adding lemon juice to flavor.  Fry until completely cooked.
Prepare lettuce and add the chicken to the lettuce, either warm or cooled.   Use the rest of the lemon on top for extra flavor.  May top with small amount of salsa if desired.

    I would recommend removing the “seasoning salt” from the Chicken Taco Salad recipe as most seasoning salts I have found have sugar in its ingredient list!

      we recommend you check all your seasonings. We use Mrs. Dash seasoning salt and here are the ingredients. We also shop at Whole Foods, Sprouts or the diabetic isle and always read labels. This will keep you from accidentally using a product that contains sugar Ingredients
      onion, black pepper, parsley, basil

    is coconut oil okay to fry chicken in for this recipe (P2)

      yes it is fine as long as total is 2T total per day

    Can you use grpund Turkey in this recipe. And what is the calorie count?

      Turkey is not on phase 2. Calories vary depending on amount of veggies used to adjust your daily calories. Usually around 180-230 cal the protein will be 86 cal for the chicken breast.

    Instead of pan frying chicken in pieces, I made a rub using the spices, lemon juice and water to make a paste and BBQ’d the chicken breast. It was so yummy on the greens.
