<p class="wp-block-paragraph">Tender chicken with delicious flavors and complimenting textures make this dish a must-have! A great way to get in your protein, vegetable and This easy to prepare stuffed chicken breast recipe is going to be a new low carb favorite! </p>



<h3 class="wp-block-heading">P2 Spinach Stuffed Chicken Breast </h3>



<p class="wp-block-paragraph">(1) 7 oz chicken breast boneless, skinless<br>1 tablespoon <a href="https://amzn.to/3qebfZ4">MCT oil</a> (Or <a href="https://amzn.to/3rcxrlF">MCT Coconut Oil spray</a>)<br>1/2 teaspoon paprika<br>1/2 teaspoon <a href="https://amzn.to/3qPQ6Fn">Himalayan Pink Salt</a>, divided<br>1/4 teaspoon garlic powder<br><meta charset="utf-8">1/4 teaspoon onion powder</p>



<p class="wp-block-paragraph"><strong>Filling</strong><br>2 Tbsp cottage cheese<br>1 &#8211; 1/2 cups chopped fresh spinach<br>2 Tbsp. onion, chopped <br>1/2 teaspoon garlic, minced<br><meta charset="utf-8">1/2 teaspoon red pepper flakes </p>



<p class="wp-block-paragraph">Preheat oven to 375 degrees. </p>



<p class="wp-block-paragraph">Place the chicken breast on a cutting board then use a sharp knife to cut a pocket of the chicken breast. Drizzle/spay on the MCT oil</p>



<p class="wp-block-paragraph">Add the paprika, salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken. </p>



<p class="wp-block-paragraph">In small bowl combine cottage cheese, spinach, garlic, red pepper and remaining <meta charset="utf-8">1/2 teaspoon of salt and stir well to combine. </p>



<p class="wp-block-paragraph">Spoon the spinach mixture into the chicken breast. </p>



<p class="wp-block-paragraph">Place the chicken breast in a baking dish. (Can spray the dish with MCT oil for easy clean up) </p>



<p class="wp-block-paragraph">Bake, uncovered, for 25 minutes or until chicken is cooked through.</p>



<p class="wp-block-paragraph">Counts as one protein and one veggie.</p>

<h3 class="wp-block-heading">P2 Texas Dirty &#8220;Rice&#8221; (Beef &amp; Cabbage) </h3>



<p class="wp-block-paragraph">100g lean ground beef <br>2 cups cabbage finely chopped into rice sized pieces (I used a food processor) <br>1 cup chicken broth or water <br>1/2 tsp. cumin <br>1/2 &#8211; 1 Tbsp. chili powder <br>2 Tbsp. minced onion <br>2 cloves garlic, crush and minced <br><a href="https://amzn.to/3qPQ6Fn">Himalayan Pink Salt</a> &amp; pepper, to taste</p>



<p class="wp-block-paragraph">Serve with <a href="https://amzn.to/3HVK3UZ">Frank&#8217;s Hot Pepper Sauce.</a> </p>



<p class="wp-block-paragraph">In a large frying pan, brown beef over medium high heat. Add the rest of ingredients and cook until cabbage is tender adding more water or broth as necessary. Cook down until no liquid is left. </p>



<p class="wp-block-paragraph">Serve hot. Count as (1) veggie and (1) protein</p>

<p class="wp-block-paragraph">A favorite P2 recipe from the <a href="https://www.facebook.com/groups/littlechoiceseveryday">Facebook Group</a> made with ground beef and several spices. The recipe is very simple and great to make ahead. Double or triple the recipe for easy meal prep. They have a great Italian flavor and are so filling and satisfying while on a low calorie diet</p>



<h3 class="wp-block-heading">P2 Mini Meatballs </h3>



<p class="wp-block-paragraph">3.5 oz ground beef <br>1 Tbsp bread crumbs (this is the equivalent of your WASA or grissini allowance (crushed). <br>1 Tbsp milk <br>1/4 tsp onion powder <br>1/4 tsp basil <br>1/4 tsp oregano <br>1/4 tsp garlic salt <br>Pinch of pepper </p>



<p class="wp-block-paragraph">Preheat oven to 425. Combine all ingredients in a bowl. Form into small balls (I get 8-10 in a batch.) Place on baking sheet and cook 7-9 minutes or until done. Drain on paper towels.</p>



<h3 class="wp-block-heading">Simple Signature Asparagus </h3>



<p class="wp-block-paragraph">100&nbsp;grams&nbsp;asparagus (6-8 medium spears)<br><a href="https://littlechoiceseveryday.com/Shop/signature-blend/">Signature Blend Seasoning</a></p>



<p class="wp-block-paragraph">Cut off the woody ends of the asparagus and place on a baking sheet. Drizzle with <a href="https://amzn.to/3qebfZ4">MCT oil</a> or spray <meta charset="utf-8"><a href="https://amzn.to/3rcxrlF">MCT Coconut Oil spray</a> over the asparagus. Sprinkle the&nbsp;Signature Seasoning&nbsp;over top.&nbsp;</p>



<p class="wp-block-paragraph">Bake at the same time as your meatballs, checking them for your desired of doneness. </p>

<p class="wp-block-paragraph">100 grams lean ground beef <br>1 cup chopped tomatoes <br>½ cup water <br>2 Tbs. minced onion <br>2 cloves garlic crushed and minced <br>Pinch of garlic powder <br>Pinch of onion powder <br>¼ tsp. chili powder <br>½ tsp <a href="https://littlechoiceseveryday.com/Shop/three-amigos-mexican-blend/">LCM Three Amigos Blend </a><br>Pinch of oregano <br>Cayenne pepper to taste (optional) <br><a href="https://amzn.to/3qPQ6Fn">Himalayan Pink Salt</a>&nbsp;and pepper, to taste </p>



<p class="wp-block-paragraph">Brown ground beef in a small frying pan, add onions and garlic. Stir in tomatoes and water. Add spices an simmer slowly until liquid is reduced. The longer it cooks, the more tender and flavorful. Add a little water as needed to prevent burning. Serve with chopped green onion or tomato garnish. </p>

<h3 class="wp-block-heading">Unstuffed Cabbage Roll </h3>



<p class="wp-block-paragraph">• 1 pounds ground beef <br>• 1 small onion, chopped (allowed because you are making more than one serving)<br>• 1 small head cabbage, chopped <br>• 2 (14.5 ounce) cans Hunts diced tomatoes <br>• 1 (8 ounce) can tomato sauce <br>• 1/2 cup water <br>• 2 cloves garlic, minced <br>• 2 teaspoons <a href="https://amzn.to/3qPQ6Fn">Himalayan Pink Salt</a>&nbsp; <br>• 1 teaspoon ground black pepper </p>



<p class="wp-block-paragraph">Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. </p>



<p class="wp-block-paragraph">Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes.</p>

<ul class="wp-block-list"><li>100g shrimp (peeled &amp; deveined)</li><li>4-6 cloves minced garlic </li><li>2 Tbs chicken broth or 2 Tbs MCT oil</li><li><a href="https://amzn.to/3qPQ6Fn">Himalayan Pink Salt</a> and pepper, to taste</li><li>Chopped basil</li></ul>



<p class="wp-block-paragraph">Heat nonstick pan over MED-HI heat. Mix of the broth with pepper, minced garlic, and other spices. Add to pan.<br>Cook less than a minute. Be sure not to burn the garlic. Add shrimp. Cook 3 minutes. Top with basil and serve. <br></p>



<p class="wp-block-paragraph">Grilling instructions:</p>



<p class="wp-block-paragraph">Preheat the grill to medium.<br>Grill shrimp for three to five minutes, until pink and curled. Be careful not to overcook. Larger shrimp take longer than smaller ones, of course! While cooking, baste shrimp with mix from above. </p>

<p class="wp-block-paragraph"><strong>Ceylon Cinnamon</strong>&nbsp;contains 41 different antioxidants which are highly effective at fighting inflammation throughout the body.&nbsp;Cinnamon helps you lose weight by helping increase your metabolism i.e. helping increase how you burn calories, and by extension fat.&nbsp; It can also lower blood sugar levels in people with type 2 diabetes. <p class="wp-block-paragraph"><strong>Ginger</strong>&nbsp;work wonders for your digestive tract as well ad you circulatory system. It is a well-known anti-inflammatory and stimulant, which is great for&nbsp;blood flow helping to&nbsp;keep your mind alert. As an added bonus it treats upset stomachs, diarrhea, and nausea as well as help prevent infections.</p>



<p class="wp-block-paragraph"><strong>Nutmeg</strong>&nbsp;is a great for detoxing the kidneys and liver. Nutmeg also promotes healthy digestion and is often used as a pain reliever. Nutmeg is also used to ease digestive tract upsets, such as nausea, vomiting, and diarrhea. The magnesium in nutmeg encourages sleep and relaxation.</p>



<p class="wp-block-paragraph"><strong>Allspice</strong> lowers inflammation and reduces pain. <p class="wp-block-paragraph">3 tablespoons ground Ceylon cinnamon<br>2 teaspoons ground ginger<br>2 teaspoons ground nutmeg<br>1 ½ teaspoon ground allspice<br>1 ½ teaspoon ground cloves</p>

<h4 class="wp-block-heading">Lemon Ginger Water</h4>



<ul class="wp-block-list"><li>1-2 inches fresh ginger</li><li>2 Cups water</li><li>1/2 lemon, juiced</li><li>Stevia, to taste</li></ul>



<p class="wp-block-paragraph">Peel and grate the ginger. Add to the water and let it steep for at least 15 minutes. (I like to do longer, and often refrigerate them in the water overnight.)</p>



<p class="wp-block-paragraph"><strong>Here are a few ideas on how to prepare your ginger:</strong></p>



<ul class="wp-block-list"><li>Put your ginger in a garlic press – it’s like a little mini juicer.</li><li>Thinly slice ginger and add to a pot of boiling water. Turn off heat and let it steep for at least one hour, overnight, if possible. Strain to remove ginger chunks and put any leftovers in a sealed container in the fridge. (I use a Mason jar.)</li></ul>

<ul class="wp-block-list"><li>8-10 oz. water</li><li>2 tsp. Raw, unfiltered Apple Cider Vinegar</li><li>1-2 tsp. freshly-squeezed lemon juice</li><li>1/4 tsp. ground Ceylon cinnamon</li><li>8-10 drops of liquid stevia, to taste</li></ul>



<p class="wp-block-paragraph">Serve hot or cold.</p>



<p class="wp-block-paragraph">Variations: Ceylon cinnamon is one of the best spices for balancing blood sugar and is highly recommended but you can also use cloves, nutmeg, allspice, pumpkin pie or apple pie seasonings.</p>



<p class="wp-block-paragraph">Cayenne pepper has been shown to drop blood pressure and increase metabolism but be careful not to do too much, especially if you have gastrointestinal issues.</p>

<p class="wp-block-paragraph">Directions: Heat oil over med-high heat in a frying pan. Add garlic and cook for 1 min. Add spinach, salt, and pepper. Toss the spinach for 1-2 minutes until mostly wilted. Remove from heat and serve.</p>
