P2 Spinach Stuffed Chicken Breast

P2 Spinach Stuffed Chicken Breast

(1) 7 oz chicken breast boneless, skinless
1 tablespoon MCT oil (Or MCT Coconut Oil spray)
1/2 teaspoon paprika
1/2 teaspoon Himalayan Pink Salt, divided
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Filling
2 Tbsp cottage cheese
1 – 1/2 cups chopped fresh spinach
2 Tbsp. onion, chopped
1/2 teaspoon garlic, minced
1/2 teaspoon red pepper flakes

Preheat oven to 375 degrees.

Place the chicken breast on a cutting board then use a sharp knife to cut a pocket of the chicken breast. Drizzle/spay on the MCT oil

Add the paprika, salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.

In small bowl combine cottage cheese, spinach, garlic, red pepper and remaining 1/2 teaspoon of salt and stir well to combine.

Spoon the spinach mixture into the chicken breast.

Place the chicken breast in a baking dish. (Can spray the dish with MCT oil for easy clean up)

Bake, uncovered, for 25 minutes or until chicken is cooked through.

Counts as one protein and one veggie.

    This recipe looks very tasty. However, is 7ounces of Chicken Breast, along with cottage cheese, permitted for one meal during the Phase 2 hCG protocol?

      The recipe is two servings. 2 Tbsp of cottage cheese is allowed as a condiment and you will not count calories from this amount.

    Cheryl, From what I have been told we are supposed to weigh our meat raw. 3.5 oz raw chicken per is the portion we should have. 7 oz would be a full days worth!

      This is two servings. One serving is 128 calories.
