Tomato & Avocado Salad

Tomatoes are naturally low in sodium, saturated fat, cholesterol, and calories. They have a relatively high water content, which helps fill you up! But they are more than an excellent diet food, they are  packed with nutrition! One serving (150 g) of raw tomatoes is a great source of Vitamins A, C, K,  B6, magnesium, copper, folate, potassium and thiamin.

Tomatoes are also high in lycopene, an antioxidant that can help remove the free radicals in our bodies. These antioxidants help the liver to function optimally, metabolizing and removing toxins from our bodies which is why I like to include in my diet when I detox.

Tomato & Avocado Salad
5 Avocados, peeled and sliced
2-3 tomatoes, diced
1/2 red onion, chopped
1 Tbsp. extra virgin olive oil
2 tsp. apple cider vinegar
1 tsp. LCM Signature Blend Seasoning (or other Italian seasoning blends)
Sea salt and pepper, to taste
Fresh Italian parsley for topping

In a small bowl, mix vinegar, oil, and seasonings. Mix in tomatoes, onions and avocado. Top with fresh Italian parsley.
