Breakfast Sausage for Phase 3 … and life!

I LOVE breakfast foods so much and I even often eat breakfast foods for dinner! In a recent post I touch on why we should have eggs on a regular basis, especially when detoxing. But when I made a healthy decision to not consume processed meats, that meant no bacon or sausage with breakfast. Read more on the dangers of processed meats. So, when my friend Laura gave me a breakfast sausage recipe, I was very excited! I’ve adapted her recipe a bit, but it’s pretty close. I’m not a rosemary fan, so I omitted the rosemary, but if you are add it back in! I made it with one pound of meat, but it’s so good you’ll want to double it the next time! I buy the big packages of ground turkey at Sam’s Club and make a huge batch. It freezes well for a quick breakfast on those busy mornings!

BREAKFAST SAUSAGE
1 lbs. ground meat (turkey, beef or buffalo)
1 tsp. sea salt (My favorite is Himalayan pink salt)
½ tsp. ground black pepper
1 tsp. rubbed sage
1 tsp. garlic powder
1/4 tsp. fresh grated nutmeg
1/8 tsp. cayenne pepper
Pinch red pepper flakes
1/2 tsp. LCM Signature Blend
Optional: 1 tsp. rosemary, and a pinch of fennel seeds, if desired

Mix all together and form patties. Fry in a pan that has been heating with a little MCT or coconut oil. Pair with eggs, sautéed red peppers, onions and mushrooms! Or mix into your favorite breakfast recipes!

    I am wondering if the flavors would be even better if you let the mixture sit in the fridge overnight and then cooked it up.  When I make Italian sausage it always benefits from sitting.

      I have done both and it’s not a big change except if you add the red pepper flakes. Then it does get stronger if you sit it overnight.

    those fennel seeds alone will make beef taste like italian sausage.. best if you leave in fridge overnite to marinade.

    This is great! I used ground chicken and also added thyme and marjoram and crushed the fennel.I let it sit for an hour in the fridge before making patties. It is so flavorful and tender…Thanks so much for posting! 🙂
