P3 Broccoli and Cauliflower Soup

Broccoli and Cauliflower Soup for Phase 3
1 Tbs Coconut oil
2 cloves garlic, chopped
1 medium onion, diced
1 lb broccoli florets
1 lb cauliflower florets
1 1/2 tsp curry powder
1/8 tsp. Turmeric
1/8 tsp nutmeg
1 tsp salt
1 tsp pepper
4 cups vegetable broth
2 cups Greek yogurt
In a large soup pan, heat coconut oil over medium heat and sauté garlic and onions until translucent. Add broccoli and cauliflower florets and about 2 tablespoons of the vegetable broth to generate steam. Place lid on pan, reduce heat to medium, and steam vegetables for about 5 minutes. Add spices and remaining broth. Simmer until vegetables are very tender, about 15 minutes. Place in blender and puree until smooth. Return to soup pan, over low heat, and gradually whisk the yogurt into the soup. Do not bring to a boil to prevent the yogurt from curdling. Serve warm.

    I am in P2 and have been trying to find ways to do cauliflower which I don’t like. Make a mexican soup with it, but was looking for a curry recipe. I’ll adjust the recipe, leaving out the oil, the broccoli and the yogurt. I’ll use chicken broth, and add cooked chicken at the end. Voila…a complete meal. Can’t wait to try it today.

    I’m on my second week of P3 and am excited to have found your website along with recipe ideas. I made the broccoli and cauliflower soup and my whole family loved it! The great thing about this soup is one can add other ingredients to it to customize to anyone’s taste.
