Salads for P3 and P4

Carol recommends getting in 4 to 5 cups of vegetables a day and 2 to 3 of them should be green and leafy. Every day you should make a big salad. We typically will do this midday or before dinner which will help you meet your requirements for veggies and it is great for your health. Mix it up and make changes so your body does not plateau and keep it interesting.

The Classic Salad
3 Cups of Mixed Greens
1 Whole tomato
1/4 red onion
1/2 cucumber
1 tsp nuts of seeds (optional)

Sassy Vinaigrette Dressing
1 1/2 Tbsp. Sassy Vinaigrette Seasoning
4 Tbsp. MCT Oil
2 Tbsp. filtered water
1/2 c. rice or Apple Cider vinegar
15 drops liquid stevia

Blend together and enjoy!

    I love the Sassy Vinaigrette seasoning. My daughters make fun of me but, I take my dressing where ever I go!!
