Crisp Pita Salad

Phase 3 recipe
Romain lettuce

Pita Salad

Spinach
Cucumbers
Cherry tomatoes, halved
2 Eggs, hard boiled and sliced
Sugar Free bacon, cooked and crumbled
Onion or scallions, sliced

Pita Crisps:
1 Ezekiel Pita
1 Tbs. MCT oil (or Extra Virgin Olive Oil)
2 Tbs. toasted sesame seeds
1 tsp. grated lemon zest
1/2 tsp. dried thyme
1/8 tsp. salt
1/8 tsp. pepper

Dressing:
1/4 oil
3 Tbsp. fresh lemon juice
1 Garlic Clove

Split and tear the pita into bite-size pieces. On a rimmed baking sheet, toss pita pieces with oil and seasonings. Bake at 350 until chips are golden brown, about 12 to 15 minutes. Toss pita crisps and extra seasoning mixture on salad of choice. Mix dressing and toss to combine
