Quesadilla

August 27, 2010 2 Comments

Phase 3 recipe
So one of my favorite things to eat before I lost weight was Quesadillas. Having found Ezekiel, I am so excited to be able to make it  and enjoy them once again.

1 Flour less Tortilla from Ezekiel, Food for Life
1/4  Tbs Butter

Heat butter in  pan, and place tortilla in pan, browning both sides.

Add to one side of the tortilla the following:
3/4 shredded cheddar cheese, until melted
1/8 Cup greek yogurt plain

Folding the other half over cheese and yogurt.  Flip as needed to heat the Yogurt

Additions can be any of the Vegetables allowed on P3. I suggest Zucchini, green/red peppers, onions, anything you desire 🙂

You can also use the fried tortilla as a taco shell.  🙂

What about the sprouted corn tortillas? Have you had any experience with those on Phase 3? I like my quesadillas on corn more so than flour. Let me know ! Thanks 🙂

I do corn all the time, but I waited until I was stabilized – corn is a more starchy veggie.
