Waffles

Phase 3 recipe

Waffles

2 eggs, beaten until fluffy
1/4 cup Ricotta Cheese
4-6 drops stevia
1/2 tsp. Baking Powder
1/4 tsp. Cinnamon
1/8 tsp. Nutmeg
Add all ingredients to beaten eggs and mix until well blended. Spray waffle maker with MCT or other cooking spray. Pour into waffle maker and cook as usual. I have also done this like pancakes. Just as yummy! Top with toppings of choice: butter and strawberries, In Phase 4 you can add blueberries, no-sugar added syrup. For syrup use 100% pure maple syrup, honey DiVinci’s are yummy too.

Healthy P2 Friendly Strawberry Jam

Take a handful of Strawberries, cinnamon, Stevia, 1/2 tbs lemon juice, blend together, or put it all in a zip lock bag, smash it all up and …voila….Strawberry jam

    I've tried these also as pancakes and for a topping, I've taken cream and put in a few drops of English Toffee stevia. Yummo!

    Can you subsitute cottage cheese for the ricotta cheese? I have that right now, and would love to have this tomorrow morning.

    I made these today with Fage and one egg(I don’t do well with eggs) because I didnt have any ricotta and they were pretty good..
